Homey Carrot & Ginger Soup for The Soul
Whenever I feel stressed, sad or I just want to feel a little bite of home I know I need soup! Yummy, healthy homemade soup…it starts warming up the soul with every sip!
This is one of my favorite soup recipes; I love the vibrant color and the dense and smooth texture of it!!
I do a lot of variations depending on the fun ingredients in my fridge! but this is the standard recipe :)
4 cup Carrot
3 cup Organic vegetable Stock
¼ cup Diced Onion
¼ cup chives
2 tbs garlic
3 tbs coconut oil/ olive oil
salt to taste
Heat the oil in a large saucepan over medium-low heat. Add the onion, chives, garlic and ginger. Cook for aprox 5 mins until you see the onion turning into a transparent color. Add the carrots (already cutted into pieces) and cook until they get soft. aprox 15 min. Do not let them turn brown (overcook) ,we love the nice vibrant color! Add the vegetable stock, salt and pepper to taste. Cook until vegetables are very very soft, aprox 25 minutes.
Remove from heat, and let it cool down a little bit. Puree in batches using a nice blender or food processor. Return to pan over a low heat. Add more stock if you prefer your soup a little less thin...I love mine a little more dense almost pure ;) . Garnish with a little pesto sauce and shaved fresh ginger!!!
This soup is so good, you need to give it a try! for cheese lovers add feta cheese! another nice twist is adding pomegranate seeds!! I love the sweetness and crunchiness it brings to the table!
Prepare in advance and store in the fridge for up to 4 days!
