Matcha & Coconut Vegan Muffins

Are you a sweet tooth like me? Don't sweat it, relax, the trick is to always have healthy baked goodies (healthy treats!) at hand so you can drink your coffee or tea with throughout the week!!! People call it guilt free treats, I don't like the word guilt being associated with food, why? Because food must make us feel good, energized, renew, not guilty!! There is when it becomes pshycological!). 

I had some very ripe bananas that I had to use right away and some culinary matcha as a gift so I came up with this recipe! I think that the cream cheese frosting recipe from my book will take these little guys over the top!!!

I always bake everything in batch and freeze so I'm ready to pop some goddies in the oven for coffee break!

Vegan Matcha & Coconut Gluten-free Muffins Recipe:

Ingredients:

-6 ripe bananas

-2 cups almond flour

-1 cup GF old fashioned oats

-1/4 cup chia seeds soaked in 3/4 cup of filtered water for 5 min until jelly texture

-2 T coconut oil

-3 T 100% Maple syrup

-1/4 cup unsweetened dried coconut + extra for topping

-1/4 cup Orteas matcha powder

-1 t madagascar vanilla

-1 t aluminium-free baking powder

Procedure:

Mix everything with your hands making sure bananas are mashed and all ingredients are combined. Pour into muffin pan add some more coconut to top off and bake for approximately 25 min at 350 F (check because remember all ovens vary!!)
