Recipe for Roasted Veggie Panini with kale chimichurri:

Roast eggplant, zucchini, portobello mushrooms (previously rubbed with coconut oil and pink salt) for approximately 27 min at 375F.

Meanwhile make the Kale chimichurri by adding into your  blender 8 cups kale + 1/2 cup olive oil + 2 garlic cloves + pink salt

Thats it!!! So easy!

Make your sandwich with an artisan local sourdough bread- spread your chimichurri, almond cream cheese (I use this from Wholefoods) add the roasted veggies and and its ready to enjoy! You can pair with some kale chips! Recipe in my book!!!

picnic basics- Natural sunBlock and Insect Repelent

Make sure to protect your skin from the harmful sun rays with lots of sunblock. This Sunblock is a good option because not only is it easy to apply, but it's natural! Free of- GMOS, Gluten, parabens, phthalates, sulfates, artificial fragrances, artificial colors- those nasty ingredients that our skin (our largest organ) will absorbe and affect our health! (Plus it's recyclable, vegan and cruelty-free! YAY!)

And don't forget to keep those mosquitos away with a natural repellent like this one! Non greasy made with natural ingredients, essential oils and it's also cruelty free!

Picnic Basics- healthy bagged potato chips & coconut water

You know I'm all about real ingredients and I just love when I can find better versions of foods that are normally not healthy at all. So yes! Fourth of July is a holiday where it’s fine to have potato chips, but look for ones like this one! Jackson's Honest potato chips are made with coconut oil and the ingredients are just non-GMO potatoes, organic coconut oil and sea salt (YASSS!) So clean and simple! Definitely my kind of chip.

Continuing on the clean ingredient note, this coconut water is also a great option for picnics. I usually recommend Harmless Harvest because it's raw and organic, but it can go bad very easily if not properly refrigerated. So since you are going to be out in the heat, this Taste Nirvana can also work! Great taste and the ingredient is JUST coconut water (not sugars, no artificial anything....)

Picnic Basics- Eco-friendly Servewear

This eco-friendly servewear is the perfect excuse for not doing the dishes! Made from sustainable sugarcane and cornstarch it's also compostable. You can get it here!

Hope you give these recipes a try and take note on those clean and natural products! Remember to always read ingredients, not only in your food, but in the products you use on your skin too!
